Fresh and homemade

At UZ Leuven, we work with fresh ingredients as much as possible.

For example, our famous vol-au-vent is made with whole chickens delivered directly to us. No pre-packaged products, just freshly prepared, and we make use of everything. The chickens, for instance, are used to make a delicious broth.

Vegetables are delivered fresh daily, then cut, washed, and processed into soups, cold dishes, and hot meals.

If cauliflower with béchamel sauce is on the menu, we're talking about using as many as 600 heads of cauliflower!

Homemade

No pre-baked or delivered bread products here — just fresh rolls, pastries, and croissants!
UZ Leuven is the only hospital in Belgium with its own bakery. Our bakers process a ton of flour each day to provide everyone with fresh bread and treats.
The bakery operates 24 hours a day, with staff always on hand to knead, let the dough rise, bake, and finish everything. Even on weekends, the necessary workforce is in place to keep everything running smoothly.

Sauces

Our sauces and oils don’t arrive ready-made; we make everything ourselves. Mayonnaise, cocktail sauce, light sauces, remoulade, and various vinaigrettes — we prepare it all just for you.
Even salt isn’t just salt for us. We experiment with different varieties, such as salt with pepper and thyme.
At the buffet, we provide fresh herbs like chives and spring onions.
